    Found this recipe in the startribune after having tried a similar dish at a restaurant in the pavement.




    Grilled Star Prairie Trout With Soy Orange Caramel Glaze
    Serves 4 to 6.

    Note: At the Bayport Cookery, chef/owner Jim Kyndberg also uses this glaze on grilled pork. The glaze can be prepared earlier in the day and rewarmed before using.


    For glaze:

    • 1/4 c. plus 2 tbsp. sugar

    • 1 tbsp. water

    • 2 tbsp. heavy cream

    • 1 c. orange juice

    • 1 tbsp. high-quality soy sauce

    • 1 tbsp. fresh lemon juice, to taste

    For trout:

    • 1 tbsp. salt

    • 1/2 tsp. black pepper

    • 1/2 tsp. white pepper

    • 1/2tsp. cayenne pepper

    • 1/2tsp. wasabi powder

    • 1/4tsp. allspice or five-spice powder

    • 4 to 6 medium-size trout fillets

    • Canola oil for brushing

    • Toasted sesame seeds for garnish

    Directions

    For glaze: Stir sugar and water in heavy medium saucepan over low heat until sugar dissolves. Increase heat and boil without stirring until syrup just begins to turn deep amber, watching carefully.

    Remove from heat and cool slightly. Carefully stir in cream and orange juice. Return to heat and reduce to a thick syrup. Season to taste with soy sauce and lemon juice. The finished glaze should be a balance of sweet, sour and salty.

    For trout: Mix together seasonings to make a seasoned salt: salt, black and white pepper, cayenne pepper, wasabi powder and allspice or five-spice powder. Dust both sides of the fillets with the seasoning, then rub with a small amount of oil to prevent sticking.

    Place skin side down on hot grill. Once skin is crispy, turn fish over to flesh side down. Once grill marks appear, flip fillet back to skin side down and move to a less-hot section of the grill. Brush on glaze and sprinkle with toasted sesame seeds. Continue grilling until fish is cooked through.

    Serve with your favorite Asian noodle salad. It's also good with steamed rice and vegetables.
