    Pop Crackle Crappie

    2 pounds crappie fillets
    2 cups crushed Rice Krispies
    1 cup of beer
    crushed red pepper to taste
    salt and pepper to taste

    Crush Rice Krispies in a sealable plastic bag,then pour crumbs onto a plate or cutting board.Dip fillets in beer and than roll them in the Rice Krispies crumbs.Season to taste with the crushed red pepper and salt and pepper.Fry until golden brown.

    BBQ’d Crappie and Vegetable Stir Fry

    3/4 lb. Crappie fillets,skin removed
    1 tablespoon butter
    1 medium green pepper,cut into 3/4 –inch chunks
    1 medium onion,thinly sliced
    ¼ teaspoon paprika
    ¼ teaspoon freshly ground pepper
    ¼ teaspoon salt
    1 medium tomato,cut into 7-8 wedges

    Prepare grill for medium direct heat.Cut 2 18x18-inch sheets of heavy-duty foil.Arrange fillets in center of 1 sheet of foil.Fold up edges of foil to hold juices.Dot fillets with butter.Sprinkle fillets evenly with pepper chunks,onion slices,paprika,pepper and salt.Cover with remaining sheet of foil,crimping the edges together to seal.

    Place packet on cooking grate.Grill,uncovered,for 5 minutes.Stir,recover.Grill for 3 minutes longer.Add tomato.Re-cover.Grill 5-7 minutes longer,or until fish is firm and opaque and just begins to flake with a fork and tomoto is hot,stirring once or twice.

    Crappie Tacos

    1 tbls olive oil
    1 tbls chili powder
    1 tbls cummin
    1/2 tbls black pepper
    4 – 5 limes squeezed
    Marinade the fish in that for about 20 minutes in the refrigerator.
    Then bake.

    Sauce

    ½ cup of plain yogurt
    ½ cup mayonnaise
    4 - 5 limes squeezed
    1 tsp cayenne (use more if you like it hot)
    1 tsp cummin
    a little black pepper.
    Mince (red & green) jalapeno, onion, 1 tbls capers. I use about 5 or 6 jalapenos, and about a ¼ of a yellow onion.
    Mix all that together and chill.

    Slice avocado and cabbage. Put that and the fish in a flower tortilla, then poor sauce on it.
